Tilapia Provencal
4 Servings
INGREDIENTS
1 lb Tilapia Fillets
2 tsp Olive Oil
1 tbsp McCormick Smoky Sweet Pepper Blend
Provencal Sauce:
1 tbsp Olive Oil
1/4 cup pitted green olives, quartered
1/4 cup finely chopped onion
1 tbsp McCormick Smoky Sweet Pepper Blend (or caribbean jerk seasoning)
1 cup chopped seeded plum tomatoes (or use canned diced tomatoes)
1 tbsp chicken broth
DIRECTIONS
Preheat oven to 400 F. Spray foil lined 15x10x1-inch baking pan with no stick cooking spray (or use non stick tin foil). Place fish in single layer on pan. Brush with oil. Sprinkle fish evenly with seasoning blend. (I couldn't find the seasoning blend so I used caribbean jerk seasoning)
Bake 12-15 minutes or until fish flakes easily with fork.
Meanwhile for the sauce, heat oil in small saucepan on medium heat. Add olives, onion and seasoning blend; cook 2 minutes or until onion is softened. Add tomatoes and chicken broth; cook 5 to 7 minutes until tomatoes are softenend. Spoon sauce over fish to serve.
