With summer quickly approaching I am on the search for some yummy yet HEALTHY BBQ recipes. From side dish to main dish any suggestions or pointers would be appreciated!!

    Tamarinf BBQ Tempeh and Sweet Potatoes (from Appetite for Reduction CookBook)
    Nutition Per Serving are at the bottom of this recipe

    Ingredients
    Marinade

    4 garlic cloves
    1 tbsp minced fresh ginger
    3/4 cup vegetable broth
    2 tsp arrowroot dissolved in 1/4 cup of water
    2 tbsp tomato paste
    1 tbsp tamarind concentrate (Indian spice)
    3 tbsp of agave or maple syrup
    2 tbsp soy sauce
    1 tsp olive oil
    1 tsp liquid smoke
    1/8 tsp cayenne (optional)

    12 oz Tempeh cut into 3/4 inch chunks
    1.5 pounds sweet potatoes also cut into 3/4 chunks



    Directions
    Spray a 9X13 inch glass casserole pan with non-stick cooking spray. Avoid glass. In medium sized mixing bowl , whisk together all the sauce ingredients. Make sure the tamarind is dissolved. Place the sweet potatoes and tempeh in the prepared pan. Pour the sauce over them and use your hand to coat well. Let marinade for an hour at least. When ready to bake, preheat oven to 400 degrees. Cove the pan with foil and bake for about 25 minutes. Remove from oven and toss out the foil. Flip the tempeh and sweet potatoes, making sure to scrape the bottom with a spatula in case anything is sticking. Bake for another 30 minutes, flipping everything once. The sweet potato should be tender but not mushy, the sauce should be thickened and coating everything. Serve.

  • We ALWAYS grill a batch of zucchini with bell peppers and onions with our meat. I just toss the veggies with a little bit of EVOO, some italian seasoning and sometimes a dash of balsamic vinegar. YUM-O!

    Meat wise, it varies, but our favs are tri tip (marinated in tamari (soy) sauce, worcestershire sauce, garlic powder, s&p) and chicken (marinated in EVOO, chipotle with adobe, garlic, lime juice and cilantro).

    Now I'm hungry for BBQ! Too bad it's stormy here in Norcal today...

    You can grill pork tenderloin. You can just salt and pepper it or make a rub and cook it on the grill. Then brush with bbq sauce at the end, just like bbq chicken. I am also a fan of grilled veggies. Side dishes are hard and is something I struggle with too. I do make a black bean and corn salad that I guess could be healthy. Drain and rinse a can of black beans and empty into a bowl. Add a can of corn(make sure there's no sugar in the ingredients). I also add finely chopped shallot or red onion. I season with salt, pepper, a little chili powder and honey. Mix together and let it sit in the fridge to marry the flavors. It's really one of those recipes that you can tweak and make your own to suit your tastes.

    Personally I think the best BBQ sauces are ones that require no recipe to begin with. I make alot (healthy) of my own. I also like to do season-rubs in batches.

    You can pretty much grill anything....

    I make a wood-fired grilled pizza for my family: a rye or whole wheat crust, homemade garlic-rosemary infused olive oil, fresh basil, heirloom tomatoes, bocconicini slices, fresh grilled chicken (lemon, salt, pepper, gahhhhhlic) and my own roasted rainbow pepper strips with a hearty sauce. When its done, I throw finely thin strips of prosciutto on top... BIG HIT every time!
