low sodium breakfast sausage patties
I made breakfast sausage patties tonight with my cuisinart with the instructions from the manual and it was wonderful!! Had to share on board for those that love sausage but hate the sodium that comes with it..
I'll add my adjustments bellow Cuisinart's instructions
From Cuisinart Manual (from 1993 lol)
1/2 pound pork or beef, cut in 1-inch cubes and chilled
3 ounces pork or beef fat, cut in 1-inch cubes and chilled
1 tablespoon of cold water
3/4 teaspoon salt
1/2 teaspoon dried sage
1/8 teaspoon dried thyme
1/8 teaspoon pepper
flour
Put all ingredients except flour in work bowl and chop with medal blade. pulse/chop to start, then let machine run continuously, stopping every 5 seconds until desired texture is reached.
Shape mixture into cylinder 2 inches in diameter. Wrap in plastic wrap or foil and refrigerate for 3 hours or overnight. Cut into 1/2 inch slices and cook, or wrap individually and freeze.
To cook, coat each patty with flour. Place patties in cold skillet and cook over moderate heat until browned. Turn and cook second side over medium to low heat allowing 15 to 20 minutes total cooking time.
I used a pork steak, it was defrosted but I put in freezer for about an hour to get it firm/chilled. It was 12 oz raw and cooked down to 9 oz. I cut it into one inch-ish chunks fat and all and threw in processor bowl. The spices I used 1.5 of what the recipe says and added red pepper flakes because I like everything spicy!! And the salt I only used 1/8 teaspoon - and it was fine without it because of the spiciness for me.
I just made patties and the one steak made 10 patties about an inch/inch and half in diameter. And the pork steak was only $1.98 a lb!!! Much cheaper than store bought ready made sausage!!
