I am about at the end of my salad for lunch tether... There are only so many salads you can really enjoy day after day after day. So I was wondering what your low fat lunch alternatives are? I work in a busy office environment but have a fridge and microwave at work.

i really like chicken salad w/ grapes, celery and walnuts.
you can also do soups since you have a fridge and microwave
i had a recipe that is 1 can black beans, 1 can corn (use fresh if you are able), crumbled feta, 1 chopped cucumber and some grape tomatoes. mix all with some balsamic vinegar and oil. chill. tasty and loaded with veggies! I like to have a piece of sourdough bread alongside it but you could omit that if you are watching carbs.0 -

Tuna! Super delicious!
whole wheat toast, with a half can of tuna, chopped celery, a squirt of fresh lemon juice, and if you are having a good day, a slice of melted cheese.
