Chicken Version of a Tuna melt
I made a Chicken Version of a Tuna melt(Bread and Mayo excluded).
1 Portabello Mushroom Cap
1 slice tomato (cut up in small pieces)
4 slices cucumber(cut up in small pieces)
1 tsp EVOO
Dash Salt
Dash Pepper
Chicken
1 tbsp Lemon
Slice Swiss Cheese (reduced fat optional)
1 cup Romaine
Using a spoon take the gills out of the mushroom. Brush lightly with .25 tsp EVOO. Put under broiler for about 10 minutes. Turning once.
Add the following ingredients in bowl and mix:
1 slice tomato (cut up in small pieces)
4 slices cucumber(cut up in small pieces)
.75 tsp EVOO
Dash Salt
Dash Pepper
Chicken
1 tbsp Lemon
Once the mushroom is done spoon the mixture in it. Top it off with cheese and return to broiler for about 2 min or until melted.
Serve on top of Romaine lettuce and enjoy!
