Anyone have a good low cal cole slaw recipe? Thanks!

    I found one in a magazine that I like. Unfortunately I don't know the exact amounts of the ingredients off hand but the dressing contains

    - apples
    - low cal mayo
    - maple syrup or honey
    -onion
    - nuts (I use pecans or walnuts)
    And I like to add dried cranberries or raisins and cucumber as well.

    I just made this on Sunday.

    1 bag of Dole tri-colored coleslaw mix
    1/2 cup miracle whip
    2 tbsp vinegar
    2 tsp sugar
    salt and pepper to taste

    In a separate bowl, mix the miracle whip, vinegar and sugar. Pour over the coleslaw and mix well. Add salt and pepper to taste. I would recommend letting it sit in the fridge for at least a couple of hours. If you make it, I hope you enjoy!

    Each 1 1/2 cup serving is about 58 calories.

  • I made one that my husband asks for repeats:

    1cup lite mayo
    1 tsp salt
    4Tbsp splenda
    1/4 tsp dry mustard
    1/4 tsp celery seed
    2 tbspp cidar vinegar
    1/2 cup water (or more if you need to thin the dressing)

    Mix the dressing and use 1/4 cup for each : 3 cups shredded cabbage.
    I add either 1 chopped apple or grapes to the salad.

    I keep the dressing on hand to mix a batch quickly and it should set in the dressing for a couple of hours if possible. The calories/fat vary depending on what type of mayo you use but with apples and "lite" mayo it averages about 97 calories and 5 grams of fat for a full cup.

    I used to substitute lowfat plain yogurt for the mayo. i have served it at several BBQ's and no one knew the difference!

    I use the Jimmy's No-Fat Cole Slaw Dressing. I like to mix up a single serving at least once a day for a snack or as a side to a meal.

    Shredded cabbage and carrots
    1 can of drained crushed unsweetened pineapple
    1/4 to 1/2 cup low fat mayo

    Thinly sliced red cabbage
    Shredded carrots
    Shredded radish
    Thinly sliced green onion
    Vidallia Onion Salad Dressing.
