Calories without the Carbs & Fat?

How can I get more calories in my day to get closer to my goal without going crazy with carbs or fat? I don't eat bread or pasta, eat a ton of veggies and lots of fresh fruit and lean proteins. I measure everything I eat and I sincerely try to get close to my calorie goal, but struggling on the days I workout. Any advice?
