Looking for a low calorie low fat potato salad.any 1 help me out?

I just go easy on the mayo (light mayo) and add dijon mustard as a replacement.
I also add cilantro and tabasco sauce to mine.0 -
Replace your patatoes with steamed caulifower..........trust me, no one will even notice. Boil ur eggs and only use half of the yolks, all of the whites. Also, use a lighter mayo.......I use Best Foods made with olive oil. these modifications should work with just about any tater salad recipe.0

I like the above idea for cauliflower! And mustard does work great! Also, a good tip: thickened nonfat yogurt can make a tangy substitue for mayo and sour cream. Line a colinder with coffee filters, fill with yogurt, and put over a bowl to drain over night. It makes good dip too. Also, load up on veggies and egg whites. Or try fresh herbs and a vinigrette type dressing. I once had a salad like that using baby red potatoes, skins on for more vitamins
it was delish!
