Veggie add ins-suggestions?

Being a Southern gal I've grown up eating many veggies made with animal fats such as fatback, etc. I've ate that way as long as I can remember. I'm trying to make a change for the better in my life and I am looking for ways to add some flavor to my veggies that won't compromise my progress.
I think the biggest kicker is green beans. I like black eyed peas or pintos just about any way. Or even a smidgen of butter would be ok. But I'd love to know some suggestions for green beans. I think that's the hardest one for me. Or any suggestions to any veggies maybe I've never tried or had before that are similar in taste to green beans? Yeah I have lived a sheltered "food life" lol.
