Spinning - Eliptical Help....Gaining Weight!

OK, so for the past month I have been on a schedule of:

Monday - Spin (600-700+ calories burned)
Tuesday - rest
Wednesday - Spin (600-700+ calories burned)
Thursday - Spin (600-700+ calories burned) - Did this for the past two week adding the Thursday.
Friday - Eliptical (600 - 700+ calories burned)
Saturday - Eliptical and treadmill if my back acts up (600 calories burned)

This week, I did Mon (spin), Tuesday(eliptical), Wed (Spin), Thur(spin), Fri(eliptical), and today (spin and then a 4 mile walk)

Today's calories burned were 1200 combined. I am eating protein (hicken) and fruits and veggies. I haven't been logging my food this time around because I know from past what to eat and what not to. I am retaining SO much water and have no idea why, My sodium is under the 2500mg in a day. I drink atleast 64oz of water. I am doing everything right and the scale is going UP!!! If anything, I am not eating enough, but I feel good and eat when I am hungry and am able to complete th workouts so if I was eating too littl my body would be telling me by not letting me finish a workout. I feel great, but trying SO hard not to get discouraged. I was on here for a few months and doing Turbo Fire and dropped 20 pounds......now I can't even drop, and I am gaining??? I feel bloated a good portion of the time and can tell I am retaining.

Any helpful hints please!!!!

And on a side note.....spin shoes or not? Would the scale be moving if I had spin shoes verse my sneakers???? My endurance has definitely built up because 4 weeks ago, I would never have been able to jog and today I did.

And, yes, I have a Polar HRM with strap so I know my calories are accurate that I am burning.
