tasty pasta salad

I threw together random things from our kitchen last night when I had a pasta salad craving; it was actually pretty good!

1/2 box of rotini pasta (I used the SmartTaste kind)
1 small can of sliced olives
1 medium tomato, diced
1/2 cup shredded carrots
2-3 tablespoons of ff feta crumbles
low-cal balsamic vinaigrette dressing - enough to coat pasta (I used MapleGrove Farms of Vermont)
rosemary olive oil - about 1 tablespoon...can substitute fresh or dried rosemary, I was being bad :wink:

Just mix it all together and chill. My husband and I really enjoyed it. We had it with white wine/wasabi glazed swordfish and grilled veggie skewers. I wanted to add some peppers to the salad, but we were out. It would also be good with diced onions, if you like them.

Makes quite a few servings!

    Sounds yummy. I would love some turkey or chicken in it.

    We're pescetarians, but I'm sure it would be great with some lean meat---a one-dish meal at that point! I may try it with shrimp sometime.
