Quick & Easy Potato Soup Recipe! :-)

I came up with this on the fly yesterday when trying to think up something for lunch. Thought I would share!! You can really add whatever you want to it. :drinker:

1 medium russet potato
2 servings of Neufchatel Cheese (4 Tbsp/60g)
1 cup chicken broth (for mine, I did half a serving of chicken base and 1 cup of water)
Mrs. Dash Salt-Free Onion & Herb (to your liking. I did about 8 servings at .7g a serving)
1 serving of hormel real crumbled bacon (1 tbsp)
Parsley (optional for color)


Boil chicken broth and microwave potatoes until cooked. In a blender, add the cheese, mrs. dash, parsley, and bacon. Cut up the potatoes after cooking and place them in blender. Add the chicken broth and blend! VOILA!!!

EDIT: Here is the nutrional info. This is based of a potato I used that was 235 grams.

Carbs - 46
Fat - 14
Protein - 13
Sodium - 795 (high because of the chicken base but you can use a low sodium version)
Cholesterol - 53
