Hi I'm doing the weekly shop tomorrow and I'm on a very tight budget. Has anyone got any cheap food ideas I can get? I tend to buy all frozen veg as fresh is so pricey plus I'm an awful cook so easy things please :)

How about eggs? To make scrambled eggs and omelettes? Or stews that you can make in bulk and then freeze? I'm on a tight budget too but it is doable! Good luck x

get all your beans dry, it's much cheaper. it only takes a night's soak and a couple hours of simmer time.

    rice & beans
    quinoa & kale
chickpeas in everything > hummus, falafel, with tomatoes in soup
    soups in general
find a local community garden, ask for herbs

if you are into eggs and have frozen spinach and a little cheese I scramble them all together with a slice or two of toast. Get a bag of frozen fruit and you can put that on the side. I love having breakfast for dinner :)

What about some pasta (use a little not a lot) and mix your frozen veg together with the pasta sauce :)

I had minced lamb, tinned tomatoes, onion and peppers, and tomato puree tonight with various herbs and garlic.

    REALLY yummy!

Didn't have anything with it, just a bowl of the lamb mix, 500g lamb did enough for 3 meals. What about spag bol? Use a jar sauce and bulk it up with veg and freeze some? Chilli con carne?

The OH can't cook so I've had to discover what can be cooked in bulk and frozen for when I'm not there to feed him before he starts living on pizza (and blaming me for the 10kg he's put on...)

I got this recipe from a while back on here, and it is absolutely delicious and super easy!! Just open some cans and a drop in a couple chicken breasts!

    Here you go:

    Crockpot cheesy chicken chili

    1 can black beans
    1 can corn, undrained
1 can Rotel, undrained (I use 2 cans and the kind with green chilis)
1 package Hidden Valley dry ranch dressing mix
    1 tsp cumin
    1 Tbsp chili powder
    1 tsp onion powder
1 8 oz package light cream cheese
    2 chicken breasts (I used 3 breasts)

Drain and rinse black beans. Place chicken at bottom of pot, then pour out whole can of corn (undrained), rotel, and black beans. Top with seasonings and ranch mix. Stir together. Place cream cheese on top. Cover with lid and cook on low for 6-8 hours. Stir cream cheese into chili. Use 2 forks to shred chicken. Stir together and serve.

What meats do you usually purchase? It makes it easier to recommend something when I know that.
