measuring food for accurate calorie count

I measure to try to be accurate in my calorie counts, but I am wondering: with frozen vegetables, do you measure before cooking or after?
Also, how do you count cooking oil? I use Extra Virgin Olive Oil sometimes to cook my eggs in. I drain as much off as possible, so Im not sure how to measure it!
