Calorie/Protein Goals

I have been doing my new, healthier eating plan for 3 days. (I have been using MFP for 4 days, but I'm not including the first day on the diet because I hadn't been to the grocery store to shop for new food yet.) Any way, my goal is to lose 75 lbs over a 12 month period. My calories allotted for each day are 1,630. (Which seems like a helluva lot, am I wrong?) My problem is, I am eating a ton of food, but I'm not hitting my calorie goal. So far its been approx.: 1200, 1300, 1200. My other issue is I keep going way over on my protein. How detrimental is this to my eating plan? Please feel free to take a look at what I've eaten over the last 3 days. (I already know Saturday was full of poor choices.) Any advice, ideas, etc. would be very much appreciated. Thank you!
