Top chef Canada

I can now see why Canada is not renowned for it's culinary skills. Besides the odd few celebrity chefs in and about Canada, the rest are down right scary.

Having just watched the the latest episode I am dumb founded that people who claim to be top chefs don't check seasoning, temperatures of meals and can't run a pass, which are fundamental skills in being a good cook never mind a top chef.

This is something I have experience in, having run kitchens in major 5* hotels around the world and worked with real top chefs. I know it is a competition however if we compare the standard of cooking to top chef America, then I have to say that Canada is in deep doggie doo when it comes to its food.

By the way, I come from Australia where the quality of restaurant food is paramount and the tip isn't what it is all about however I now live in Canada and am sorely disappointed.
