Here's a yummy recipe I tweaked to my own healthy perfection.
Ingredients
1 box Pillsbury reduced sugar yellow cake mix
1 small box instant fat-free, sugar-free vanilla pudding mix
1 cup solid-pack canned pumpkin
1/4 c. fat-free sour cream
3/4 tsp pumpkin spice
1 tsp. cinnamon
3/4 cup Egg Beaters
1/2 cup water
Fat-Free or Light Reddi-wip or Cool Whip (if desired)
1. Preheat oven to 350F. Spray 13x9-inch baking pan with cooking spray.
2. Combine cake mix, pumpkin, Egg Beaters, water, sour cream, cinnamon, and pumpkin spice in large bowl. Beat with electric mixer on low speed just until moistened. Beat on high speed 2 minutes. Pour into prepared baking pan.
3. Bake 40 minutes, or until wooden pick inserted in center comes out clean. Cool. Cut into 12 slices. Top each with a serving of Reddi-wip jof Cool Whip (if desired) just before serving. Sprinkle with additional cinnamon, if desired.
The first time I made this I actually forgot the water and it was fine, lol.
I am unsure of the nutritional value. I will take any input. One serving is 1/12 the cake.
