Trouble deciding what to eat for a dinner event...

So my department at work is having a dinner next week to celebrate another successful audit (I work in Accounting, specifically Payroll). We've been given a list of entrées ahead of time so we won't spend so much time thinking it over the day of. Thank goodness for that because it's gonna take me all week to decide!! Everything sounds so deeee-lish!! What would YOU choose??
All Natural Prime Rib Steak
Creamed Spinach ~ White Beans with Roasted Garlic ~ Black Olive and Tomato Compote
Pan Roasted Mary's Chicken
Filled with Mozzarella, Shallots, Spinach, Arugula ~ Spring Garlic Orzo ~
Baby Bok Choy ~ Tarragon/Garlic Jus
Pan Seared Scottish Salmon
Spice Dusted ~ Served Over Red Lentil Fondue ~ Pickled Cucumber ~
Red Onion Creme Fraiche
Lemon Risotto
(Vegetarian Option)
Sweet Peas ~ Cippolinis ~ Pea Shoots ~ Grana Padano

I'd go with the salmon or veggie option only because I can't stand the taste of olives or arugula. I love olive oil but actual olives, no thank you. My husband, who likes both said he'd chose the prime rib since he only eats red meat on special occasions.0

I'd have the steak or the salmon because you can more easily see what it is that you're eating - you can choose whether to eat all or some of the steak/salmon and the sides.
The risotto and chicken are a bit trickier because they will have lots of things mixed in that you won't be able to see.0 -

Also - in the end of the day it is a special meal, so don't stress to much about it - be good for the rest of the week - and then enjoy your night out..... what you do around drinks is most probably more important in the big scheme of things (not that I want to be a killjoy or anything)0 -
