New Recipe to Share
I was thumbing through my old weight watchers book for some calorie friendly ideas and ran across these two recipes. Tonight I will be making the Spinach Lasagna
I will post pictures tomorrow morning.
Don't forget to put it into the recipe calculator as the calories from whatever you purchase may vary.
Makes 6 servings
1tablespoon of Olive Oil
1/4 cup of Finely chopped onions
3 tablespoons of all-purpose flour
4 cups of 1% milk (I'm using skim)
1 (15 ounce container) of fat-free Ricotta cheese
1 (10 ounce) package of frozen chopped spinach, thawed and squeezed dry
1 egg white
1/4 teaspoon of ground nutmeg
9 no-boil lasagna noodles
1. Preheat oven to 400 (degrees Fahrenheit )
2. Heat the oil in a non stick saucepan over medium-high heat. Add the onions and cook until slightly wilted, about 3 minutes. Add the flour, stirring until blended. Whisk in the milk and bring to a boil. Boil until the white sauce thickens, about 5 minutes. Remove from heat.
3. Meanwhile, combine the ricotta cheeese, spinach, egg white, and nutmeg in a bowl. Spoon 1 cup of the sauce onto the bottom of an 11*7 inch baking dish. Arrange 3 noodles over the sauce. Spread one half of the ricotta mixture evenly over the noodles. Top with 1 cup of sauce. Layer 3 more noodles, the remaining ricotta mixture and 1 cup of sauce. Top the remaining noodles and sauce. Bake uncovered until hot and bubbly, 20-25 minutes
* In the note section is says serve with crusty Italian Bread, a side mesclun salad and a jug of red wine.
(I'm just making the lasagna.. and if I can find some calorie friendly bread I'll let you guys know)

I thought the same thing Sonnie, but yep it calls for 4 cups of milk0
