Apple Bran Muffins
Preparation Time: 20 minutes
Servings: 12
Try a new take on your favorite bran muffins. These deliciously hearty muffins call for apple juice, All-Bran® cereal and a low-calorie sugar substitute. Enjoy!
Ingredients
2 cups all-purpose flour
2 tsp low-calorie granulated sugar substitute
1 Tbs baking powder
1/2 tsp salt
2 cups All-Bran® Original
or 2 cups All-Bran® Bran Buds®
2 cups apple juice
1 egg
1/4 cup vegetable oil
Select All
Directions
1. Stir together flour, sugar substitute, baking powder and salt. Set aside.
2. In large mixing bowl, combine Kellogg's® All-Bran® cereal and apple juice. Let stand about 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.
4. Bake at 400°F about 26 minutes or until golden brown. Serve warm. Note Variation: 2 cups milk may be substituted for apple juice.

All Bran Banana Cocoa Muffins
Ingredients
• 1 cup all-purpose whole wheat flour
• 4 Tbsp granulated sugar
• 1/4 cup cocoa
• 2 teaspoons baking powder
• 1/4 teaspoon baking soda
• 1/2 teaspoon salt
• 2 cups Kellogg's* All-Bran* Original cereal
• 1 cup milk
• 1 egg
• ¼ cup unsweetened applesauce
• 2 ripe bananas, mashed
Directions
1. Preheat an oven to 400 degrees F. Grease two mini muffin pans.
2. In large mixing bowl, mix together cereal and milk. Let stand for 5 minutes or until cereal is softened.
3. In medium bowl, mix together flour, sugar, cocoa, baking powder, baking soda and salt. Set aside.
4. Stir in egg and applesauce; beat well. Stir in bananas. Add flour mixture, stirring only until combined.
5. Spoon the batter into the prepared mini muffin cups, and bake in the preheated oven for about 14 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
