I just found this recipe for Oatmeal Peanut Butter Banana Bars on Pinterest. I haven't tried them yet because I don't have any applesauce, but I'm seriously considering boiling an apple right now so that I can eat a bar within the hour and have them ready for my daughter in the morning.

Here is my version with a few substitutions (I used applesauce and Splenda instead of brown sugar and 2 egg whites in place of 1 large egg):

Peanut Butter Banana Oatmeal Squares

1 1/2 cups quick cooking oats
1/4 cup sugar free apple sauce
2 Tablespoons Splenda
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 cup milk
2 egg whites
1 large mashed banana
1/4 cup creamy peanut butter
Mix together the quick cooking oats, light brown sugar, baking powder, kosher salt and ground cinnamon.
Add in the vanilla extract, milk and egg. Mix the ingredients together.
Then add in the mashed banana and peanut butter. Combine all of the ingredients.
Pour the mixture into a lightly greased 8 by 8 inch baking pan. Bake at 350 degrees for 20 minutes.
Cut into 9 squares and enjoy!

    If you want to drop the calories even more, try using PB2. It is a powdered peanut butter that is left after squeezing the oil out. 2 tbl of PB2 to 1 tbl water = 2 tbl peanut butter. Works and tastes GREAT!! Best part.....

    PB2: 45 Cals for 2 tbl, Fat 2g.
    Jiffy peanut butter: 190 Cals for 2 tbl, Fat 16g.

    I'm dying to try PB2! I am a Cali native currently living in the UK, and you can't get the stuff over here. I'm moving back to the US in July and I'm definitely going to give it a try. Thanks! x
