Hi - I am dying to try a new cake recipe called Pig Picken cake. I want to make with less fat/calories. So, it calls for 4 eggs and 1/2 cup of oil - any ideas how I could lighten this up? The other stuff is easy (cool whip & pudding - sugar/fat free).

here is the full recipe:
yellow cake mix
1/2 cup oil
4 eggs
can of mandarin oranges

topping:
Cool Whip
vanilla instant pudding
crushed pineapple

Not sure about the eggs, but you can replace the oil with the same amount of apple sauce.

I would think you could cut 2 of the egg yolks and not have any trouble.
  • I make cake with just 8ounces of club soda no eggs,no oil. It's yummy.Hope this helps!

you can replace all of your dry ingredients with a can of diet pop (diet orange, cream soda, sprite zero) anything. Follow the baking directions on the box. It works great and you get rid of all those calories.

Egg substitute for the eggs obviously and no sugar applesauce for the oil. It sounds great I love mandarin oranges.
