Hi guys,
I'm wondering whether it's possible to substitute higher-GI carbohydrates like rice/pasta/potatoes with "simple" vegetables such as carrots/peas/tomatoes etc?

Sure, why not. Keep in mind there's a big calorie difference, which makes more room for good ol' protein and fat.0

it can be done, it's a struggle for me. i used to be a potato with every meal kind of guy. I try to eat extra servings of veggies and none or small portions of starches. i can't cut them out all the time every day, but i am doing better. plus like neanderthin said that leaves more calories for steak0

Try the mashed cauliflower. Great substitute for mashed potatoes. I also fry radishes in bacon, sort of like fried potatoes.0
