I am going to try and eat more lentils. I go some and now have to figure out what to do with them.

    I'm interested in this as well. In particular recipes that my unadventurous man would eat.
  • Here's a "souper" easy lentil recipe: (See what I just did there? LOL!)

    Lentil Soup:

    2 C dried lentils
    Peeled and finely minced garlic--amount according to your taste
    2 med, onions, finely chopped
    1 1/2 T. olive oil
    8-10 C water, chicken broth, or stock
    2 bay leaves
    1 t. thyme
    1 t. oregano
    Any vegetables you have on hand, such as chopped celery, carrot, potato, spinach, mushrooms, tomatoes, etc.
    salt and pepper to taste

    Saute onions and garlic in olive oil over medium heat for about 5 minutes, or until soft
    Add water or stock.
    Add lentils and remaining ingredients. Simmer, stirring occasionally, for at least an hour.
    Remove bay leaves before serving.
