Buffalo Meatballs
1 package ground turkey mixed with:
at least 1/2 cup Franks Red Hot sauce
1 handful finely chopped celery leaves and/or celery
1/2 medium onion, minced, saute in a little oil to soften
2-3 cloves garlic, minced, sauted in a little oil with onion
1/2 cup bread crumbs
1 egg, beaten
1 Tbsp Worstershire Sauce
Tabasco if you like it hotter than Franks
Salt (Johnny's if you have it) and pepper to taste
(I always cook a little piece of the mixture to make sure that I have
enough Franks in the meat. If not, add more and add more breadcrumbs to
absorb the sauce if it's too wet. Placing mixture back into the fridge
for a while also helps to firm it up)
1/2 pkg cream cheese mixed with 2-3 ounces Blue Cheese...or more if you
like the flavor a lot...I DO!
Take enough meat mixture to make an approximate 1.5" meatball and press
it flat into your hand. Place a very small amount of the cheese mixture
into the middle of the the flat ball. If you use too much the cheese
will goo out. Fold the flat meat ball in half gently and roll into a
ball. Place on a baking sheet. Continue until all of the meat is used.
Bake at 375 for about 35 minutes, or until meatballs are cooked
thoroughly. For extra good flavor spoon more Franks Red Hot over the top
of each meatball (highly recommended) during the last 10 minutes of cooking. If I make them I try to double or triple the batch and freeze them on cookie sheets so that I can just put them in a freezer bag and use them whenever I need to.

I made these last night and they were great!
My boyfriend is an expert in making buffalo wings (he is from buffalo) and he loved these. Had me put them in a container for lunch today for him too.
So, I thought I'd post and revive the recipe for those other hot wing lovers out there. We had them with a side salad.
I did the calculations for the nutrition information. This is per each 1.5 inch meatball (which is pretty big, I only was able to eat 3)
