Protein snacks w/ food allergies, etc

Hi all!
I'm looking for protein snack ideas. What makes it difficult is the fact that I have food allergies - I'm allergic to wheat, dairy, yeast, lettuce/spinach and other leafy greens.
That difficult enough? Lol
I was eating soy yogurt, but it's high in sugar so I gave it up. I already started eating eggs at bfast and part of my snack is veggies w hummus. I'm severely hypoglycemic and I'm trying to keep it regulated better, hence the eggs at bfast.
Any suggestions would be greatly appreciated! I don't mind eating the same thing over and over, but I need more ideas. My diary is open!

- Fruit with nuts or nut butters
- Quinoa
- Tofu/Tempeh/Edamame
- Beans/peas/lentils
- Lean meats, jerky
You can make your own granola type bars using buckwheat or quinoa flakes if you can't have oats, there are recipes all over the internet. You can roast chickpeas or other beans for easy-carry snacks. Make your own trail mix. Keep some hard boiled eggs in the fridge at work. Pop-top cans of beans.

You can make falafels, meatballs, veggie burgers, or whatever you like.
I think you just need to think about what you can make yourself, than what you can buy premade.0 -
Vegan protein powder mixed with water or almond milk; . brown rice and black beans make a good base for veggie burgers. Whole foods and Trader Joe's have soy yougurts without added sugar, or you can get a yougurt starter and make your own so you control the kind and amount of sugar in it.0

Thanks for the suggestions !! I've never had roasted beans and I will google it, but is it time consuming? I'm a mom of two ADHD kids, teacher, writer, etc - I don't have a ton of extra time. Despite that, I try to eat as little processed food as I can.

I hear you on being busy! I work full time and homeschool my special needs teen. I am also a writer, and have to cook from scratch due to our multiple allergies and intolerances (vegetarian, dairy-free, grain-free, some nuts, various others). Add in working out, church responsibilities, and of course grocery shopping . . .Thanks for the suggestions !! I've never had roasted beans and I will google it, but is it time consuming?
