Ellie Krieger's Breakfast Cookie recipe: Tweaked

The above link is to a breakfast 'cookie' recipe. I'd like to make it for a fast snack or grab-n-go breakfast but I really would like it to have more protein....the nutrition info states that it only has 3 grams of protein per serving.
I figure I can substitute some of the dry ingredients for protein powder?
Has anyone ever done this (substitute flour with some protein powder)? I’d like a good idea of how much I can substitute without throwing the whole recipe off, since I know most baking is pretty exact.

Any ideas/suggestions would be helpful and appreciated!

    Yeah, you can add a scoop of protein powder and subtract some flour. There are specific types of protein powder that are better for use in baking. Do a google search and you'll find some guidelines and recipes.

    You'll probably just have to experiment. It will change the texture and taste, but for a cookie or bar, you should be able to make it work.

    I haven't baked anything like this for a long while, so I don't remember specifics.
