My DR said to eat more, and more often... HELP!

I have 4 children (16 months - 7.5 years in age) and since I had my youngest, my weight has gone haywire! It varies very quickly from 150lbs to 180 (I am 5' 6")... example: I weighed 181 just a few days ago, I am already down 173. SO I went to my DR who said I am hypoglycemic and had me keep a food diary for 2 weeks. The verdict: I was living on coffee and an occasonal dinner or handfull of various snacks. My DR thought I was TRYING to starve myself but truth be told, I am just busy! I have 2 kids in soccer, I coach 1 of the teams, all 4 in swimming, a first grader that has had to RE-LEARN to read because of glasses, a special education kindergartener, a home schooled preschooler, a toddler, a home based buisness (homemade crafts), a chiwienie puppy (NEVER ending accidents to clean up), I am deaf, I babysit A LOT, my husband is in the military hence rarely home, I mean the list goes on and on which is the real reason I wasn't eating regularly... and also the reasons my DR didn't admit me to the hospital... I LOVE MY LIFE!!!! I am NOT complaining! I just have to learn how to focus on myself til I can make these things habit... Which is why I am in need of your help! :) I am logging my food but my trouble is that I have to do it seperatly on paper to post the TIME. I had half my breakfast at 730 and the other half at 1030... My dr wants me to log WHEN I eat as well as what it is that I'm eating. She said point blank that she doesn't care what I eat at this point, that we would focus on that later once we trained my body to REQUIRE food every couple hours... I, on the other hand, only want to "train" it once with a healthy food basis, in an attempt to head off poor eating habits in the opposite direction. I think that concept was more clear to me than to her, although she probably still thinks my eating habits (or lack there of) were intentionaly convienient. Does anyone have any thoughts on this?? I want to be healthy and be able to meet my grandchildren one day!

P.S. I need more MFP friends!!!!! I would like to have some busy, 20 or 30 something mom support!! :)

    If you can, look at my food diary. Look at the last few days. I don't have it by hour but I have a total of 6 meals throughout the day. Breakfast, Morning Snack, Lunch, Afternoon Snack, Dinner, Night Snack. I basically eat every 3 hours or so. I will write in more detail when I get home.
