Stronglifts 5x5 - Two questions

So I've decided to give this a go, but I have a couple of questions.
Mehdi seems to be advocating EATING one's body weight in lbs * 18kcals per day. That would be just about twice what I'm eating right now attempting to lose around a lb of fat per week.
So should I continue eating to lose fat as per MFP, or eat to build muscle as per SL? Or perhaps I should compromise? The fat's gotta keep going. I'm not keen on spending the next 3 or four months building muscle at the cost of not losing fat. Thoughts?
The other thing is that the plan has one working out 3 times a week. I've found that my recovery often takes 3 days now that I'm older. Do I slow the plan down to allow my muscles to recover, or do I push through and maintain the strict lifting schedule?
