Spaghetti Squash...

I've seen a lot of topics lately about the tofu noodles... they seem kind of hard to find, or people are a bit wary about them. Now, I've not tried them, so I have no idea on that subject, but what I have tried is spaghetti squash. It's a type of squash that, when you cook it and separate it a certain way, it has the shape and consistency of spaghetti noodles. My dad used to use them all the time, and I never noticed... much. They're not exactly the same...a bit crisper, but really, for all intents and purposes, they're great. They don't have a very strong flavor, so it kind of takes on the taste of whatever sauce you put on them. Here's a few links to nutrition facts and how to prepare them. The first one's a PDF, so if you don't like those, there's another link. The PDF has a lot of good info, and even some recipes in it, but the other link's good, too. Just another low-cal alternative to pasta!

    I love spaghetti squash! I haven't made it in awhile but mmmm gonna get some on my next market trip!

    thanks for reminding me.....I'm Italian and usually make a gravy (tom.sauce w/ meatballs, sausages, pork) for my family on Sunday....its got enough cals w/out the pasta....so I'm gonna make the squash for me and let them have the pasta...or they can join me...but they probably wont LOL...
