    I have a 2lb bag of shrimp thawing in the sink. I want to make something healthy for dinner that the kids will like too. Any ideas? I was thinking baked Coconut Shrimp. Any other ideas or recipes?

    Use panko bread crumbs the kids love it...

    Serves 2

    10 ounces EZ Peel White Shrimp, 26/30 pieces per pound, peeled with tail in tact
    1 large egg white
    1 tablespoon water
    ½ cup panko bread crumbs
    ⅛ cup flour
    ¼ medium lime, juiced
    8 tablespoons light sour cream
    chili garlic sauce to taste (hot!)

    1. Preheat oven to 400.
    2. Peel shrimp leaving tails on, and dry on paper towel.
    3. Whip egg white with water, and place flour, egg white and panko bread crumbs in separate bowls.
    4. Spray cookie sheet with cooking spray.
    5. Dip shrimp in flour, then egg white, and then panko and place on cookie sheet.
    6. Spray the tops of shrimp with cooking spray and bake for 5 – 7 minutes until shrimp just curls. Do not over bake, or you will have tough shrimp.
    7. Prepare sauce by combining lime juice, sour cream and chili garlic sauce.
    8. Serve with sauce.

    I brought shrimp for lunch, add to my salad..YUM! I'll also add it to veggie stir fry for supper:bigsmile:
