1 or 2 Serving Low Calorie recipes

I need help thinking of different things to make for lunch and dinner. I would only be cooking for myself so i wouldn't need something that has alot of servings. Any ideas would be great!

    I just went to the library tonight and got like 8 cookbooks that have recipes just for single or two person servings
  • Check out the Hungry Girl cookbooks!!! Lots of low calorie recipes, lots of them are either single serving or for two!! Yummy stuff!!!

    My absolute favorite dinner is to cook appx 4 oz chicken tenderloin (90 calories), seasoned with a little Season All or Tony Chachere's and pepper in a pan (sprayed with cooking spray - 0 calories), then put it on a couple of Mission Carb Balance whole wheat tortillas (small - 80 calories) and add 1 Tbsp of Pace Mild Picante Sauce (1 Tbsp - 5 calories) to each and roll em up.

    If I add too much pepper, I eat fresh, plain cucumber (large - 34 calories) slices on the side.

    214 calories for dinner.

    p.s. Sometimes I have 3 tortillas and 6 oz chicken. *wink*

    I love shrimp, chicken or beef stirfry. A whole bag of frozen stirfry veggies is perfect for 2 servings. Most grocery stores have several different varieties of vegetables. Add the amount of meat you want and I like to buy a variety of stirfry sauces so I don't get tired of them.

    I plan what I'm having for dinnner, is what I'm having for lunch the next day. I love basic meat cuts eg chicken, pork, fish fillets, steak etc, marinaded. 2 of my favourite is rubbing the meat with crushed garlic and chilli, or lemon juice, garlic and mint drizzled over the meat while cooking. That one is great with pork, but works well with anything. And you can add a tiny little bit of oil and turn it into a salad dressing.

    Get a tabletop grill, and grill everything from single serve steak portions, turkey burgers to potatoes, I make personal pizzas on the grill, chicken breast to put in salads, enchiladas, and much more. I've even been known to grill fries once or twice. It's easy, takes 5 minutes, and you can use your imagination to whip up things you enjoy. I love love love the Hungry Girl flat bread and create my pizzas on that.
