Creamed tuna on toast
so, I wanted to do something with the can of tuna in the fridge. played around and came up with this today. super simple, but could be tweaked lots of ways, and was pretty good if you are a tuna fan.
* melt 1 tbs butter in a saucepan -- (I added a touch of milk to help prevent burning)
* add a touch more milk and whisk in 2 tbs flour -- (you are making a simple roux here is all)
* keep whisking, slowly adding a full cup of milk.
* whisk as it simmers, and it will thicken. I added 1 tbs more flour to speed up the process. add in your drained can of tuna and let it get to the consistency you are wanting. (I let it get a little gloppy.)
then just season to taste. I added some cajun seasoning, salt and pepper was all. next time, I think I would add some diced green onions, actually.
I was really hungry, so made four pieces of lightly toasted white bread, then just poured the glop on top of them. the entire thing was 580 calories and super filling.

That sounds great. I'm a big fan of tuna.
I tried a tuna and egg white omelette last week, I wasn't a big fan of it. But this sounds tasty.

my husbands family makes creamed tuna but serves it over rice - also creamed egg (same method, but with hard boiled egg instead of tuna) on toast. i usually add some lemon pepper to the tuna for seasoning
i cant say im a big fan, but its nice for a quick meal0 -
Oh, this brings back memories. Years ago, my mother and I were dieting and we'd make this a lot. Haven't had it in years. I'll have to make it again sometime.0
