1/4 CUP + @ TBSP COCOA POWDER
1/2 CUP HOT WATER
3/4 CUP GRANULATED NO-CALORIE SWEETNER(LIKE SPLENDA)
2 TBSP BROWN SUGAR
1/3 CUP LOW FAT MILK
1 1/2 TSP VANILLA EXTRACT
1 EGG
1/2 CUP LIGHT MAYONNAISE
1 CUP ALL PURPOSE FLOUR
1 TSP BAKING POWDER
1 TSP BAKING SODA


PREHEAT OVEN TO 325 DEGREES. LINE 12 MUFFIN CUPS WITH LINERS, COAT WITH COOKING SPRAY. PLACE COCOA IN LARGE BOWL. ADD HOT WATER, WHISK UNTIL SMOOTH. WHISK IN SWEETNER UNTIL SMOOTH, THEN ADD BROWN SUGAR, MILK, VANILLA, EGG AND MAYONNAISE AND WHIP UNTIL SMOOTH. GRADUALLY SIFT IN FLOUR, BAKING SODA, BAKING POWDER; STIR UNTIL WELL MIXED. SCOOP 1/4 CUP BATTER INTO EACH MUFFIN CUP. BAKE 13 MINUTES OR UNTIL CENTER SPRINGS BACK WHEN TOUCHED OR TOOTHPICK COMES OUT CLEAN.
