Mini Pizzas-180 cals

Hi!
Once a week I do an easy cooking class with my high school students with severe Autism. The SLP and I always find easy recipes that end up being pretty high in calories as easy food usually means more processed or they are very sugary!

Today we are making mini pizzas on English muffins...everyone knows this trick. However, I bought healthier ingredients today and the pizzas came to only 180 calories for two little English muffin pizzas. These calories would be even lower if you subbed the turkey pepperoni for veggies and such. Paired with my spinach salad from home I have a yummy lunch...thats less than 300 calories!

Thomas' - Light Multi-Grain Hearty Muffins, 1 muffin (57g) 100cals
Shop N' Save - Pizza Sauce, 1/8 cup 15cals (one tbsp for each muffin)
Trader Joe's - Organic Shredded Mozzarella Cheese, 1/8 cup (28g | 1oz) 40cals (one tbsp for each muffin)
Hormel - Turkey Pepperoni Slices, 6 slices 25cals

    I always make pizzas but I like thin crust so I use a low carb, low fat tortilla as the crust. I bet my boyfriend would love the english muffin because he likes thicker crust pizza.

    PS. Being a foods teacher, it's really cool that you're teaching kids with autism how to cook. If they like what you make that even more of a miracle! :)

    I have learned that kids with Autism are picky about EVERY FOOD except pizza. I have yet to have a kid turn down pizza in my 6 years as an AU teacher!!
