Spaghetti Squash and Sausage
Had this for dinner tonight and it was great! Hubby loved it too, very filling.
1- spaghetti squash (3 lbs)
1 lb. italian sausage (I used ground turkey)
1- medium onion chopped (about 1/2 cup), I used 1/4 cup
1-medium zucchini, chopped (about 1 cup)
1/4-cup snipped parsley (I used 2 tbsp dried parsley)
1-large clove garlic, crushed
1-tbsp dried basil leaves (I used Italian seasoning)
4-medium tomatoes, chopped (I used Roma, because they seem to hold up better in the heat)
1/2-cup parmesan cheese
1/2-tsp salt
1/4-tsp pepper
Cut spaghetti squash in half lengthwise, scrap out seeds and fibrous strings. Place squash in microwave safe dish with 1/4 cup of water and microwave on high 20 - 25 minutes.
In a separate pan cook sausage and onion over medium heat until sausage is done, about 10 minutes, (for the turkey I had to add about 1/2 cup of water.) Add the zucchini, parsley, garlic, and basil, cover and cook for 3-5 minutes. Stir in tomatoes and parmesan cheese. Serve Sausage mixture over Spaghetti Squash.
Serves 6
Serving size: 1 1/4 cup Squash with 1/2 cup sausage mixture
