Hello,

I am interested in trying Quinoa but have no idea what to cook it with. If anyone has any recipes they'd like to share I would appreciate it. Thanks MFP family! :)

    I use it as a substitute for rice, but my all time favorite recipe for it is quinoa tabbouleh. It's fresh, cold, tangy and DELICIOUS.

    I have a cold quinoa salad for lunch today that I threw together last night:

    1 c. Quinoa (1 c. before cooking, that is)
    lots of chopped fresh spinach
    1 can rinsed black beans
    about 1 TB olive oil
    lots of lime juice (to taste)
    about 1/3 c. low fat feta cheese
    chopped fresh basil to taste

    It's a delicious citrusy salad with lots of protein, fiber, and taste!

    p.s. This made a LOT.

    This guy does amazing things with quinoa. He has tons of creative quinoa recipes on his blog, but here are a couple that I really like.

    This one is my favorite. I bake the quinoa cakes on a broiler rack in the oven instead of frying them. You can eliminate the eggs and/or goat cheese to save calories. They're good with just the spinach and pesto.

    You might be surprised. My hubby used to be a strictly meat and potatoes type, but he's a quinoa convert. He even makes it himself now when he cooks. :)

    Breakfast Vegan Quinoa:
    I eat this every morning. It's delicious!

    1/4 Quinoa
    1/2 cup of water/ 1/2 cup of rice milk
    Bring above ingredients to a boil. Reduce heat, cover and cook until all liquid evaporates.
    When cooked stir in:
    1 tbsp unsweetened coconut flakes, 1 tsp vanilla extract, 15 raw almonds (you may soak them before for even easier digestion)
    Put into a bowl. Top with fresh strawberries and 1 tbsp of maple syrup.

    Quinoa Tabbouleh:

    Cooked quinoa (2+ cups)
    Head of parsley chopped
    chopped red onion (to taste)
    Drained and rinsed cooked chickpeas (1 can)
    Tomatoes (chopped, grape, to taste)
    Olive oil and lemon juice

    I actually mix this up a lot-- tuna works just as well as chickpeas, and sometimes I skip tomatoes and onions, depending on how I feel.

    On a side note to this topic-- can you make quinoa in a rice cooker? If so, do you use the whole grain setting or the white rice setting? Is it the same as cooking rice where you put in one part grain to two parts water? Sorry to hijack the post!

    Coconut Milk Breakfast Quinoa
    serves 2
    1/2 cup dry quinoa, rinsed
    3/4 cup canned lite coconut milk + more for drizzling
    2 teaspoons vanilla extract
    1/2 teaspoon cinnamon + more for sprinkling
    pinch of salt
    1 banana, chopped
    1/3 cup toasted pecans, chopped
    Combine quinoa, coconut milk, cinnamon and vanilla in a small saucepan and bring to a boil. Reduce to a simmer, cover, and let cook for 15 minutes until quinoa can be fluffed with a fork.

    Divide quinoa into two bowls then cover with bananas, pecans, and a few extra drizzles of coconut milk.

    Note: you can definitely use full-fat coconut milk… I use Trader Joe’s lite coconut milk which is insanely creamy and resembles full-fat coconut milk. If I used another brand, I’d probably use full-fat. Additionally, feel free to add sugar or sweetener if needed. I (shockingly) find it sweet enough with the coconut milk and fruit.

    I dont know the specific recipe, but I went to a dinner party once where they cooked it then let it marinade with slices of lemon and rosemary. OMG it was so good!!!
