I just recently started eating better and I am so confused about eating carbs. It seems everyone has an opinion on eating or not eating them. What to do?

You're right, it is very confusing out there. Here's what I would reccomend to a family member:

Do some research so you understand the different sources of carbs, understand the difference between glycemic index and glycemic load, research leaky gut a bit, really look at your needs like exercise intensity, and then experiment a bit.

Try some different things and see how you do, just give them enough time to see some effects. A few weeks to a month should let you know if you're on the right track, then don't be afriad to make small changes and observe.

For my husband and I cutting out added sugar, grains, legumes, and most dairy has been very beneficial. This has been inherently low carb but I don't focus on limiting carbs, I work to get enough from fruits and veg to support my exercise.
