Blueberry Baked Oatmeal
3 cups rolled oats
2 tsp. sugar or sugar substitute
2 tsp. baking powder
1/2 tsp. cinnamon
1/2 cup applesauce
1 tsp. vanilla
2 cups egg substitute
1 cup light almond milk
4 scoops vanilla protein powder
1/2 cup blueberries
Directions:
Preheat oven to 350 degrees
Mix the dry ingredients in one bowl
Add milk, fold in blueberries.
Lightly spray a 9x9 pan with nonstick cooking spray. Place mixture in pan.
Bake around 30 mins. I test the center with a toothpick.
Serve as-is or in a bowl with milk.
8 servings - 275 cals, 5g fat, 30g carbs, 25g protein.
