Just thought I would share =)
I have made this new recipe this week and it was surprisingly low calorie and delicious! So here goes 
Homemade Beef Stew
2lbs stew meat
1/2 to 1 red onion (depending on preference)
4 large stalks celery
4 long carrots
4 Yukon Gold potatoes
1 stew flavoring packet ( I used Kroger brand)
1/3 cup oat flour
In a large (4-8 quart) pot on the stove, brown your stew meat with a few good pinches of the oat flour, vegetable oil, salt and pepper. While the meat is browning, chop all of your veggies to a size you like. Once the meat is browned, add the stew packet and 4 cups of water (which is one more than the stew packet calls for, I think it steams the veggies better since I add everything at once). Once well mixed, add all of your veggies. Turn the heat down to about 3 to 5 (medium low to medium) and check and stir about every 20 to 30 mins. In the last 15 minutes, if the stew still looks a bit runny, make a rue with a 2 to 1 ratio of oat flour to water. This stew is usually done in about 2 hours, but if cooked at a higher heat can be done sooner. This makes 6-8 servings depending on the size. For 6 servings it is 370 calories, at 8 it is about 270.
