Amazing meatless chili recipe (crockpot)

Pulled this out of a magazine a few months back and just made it yesterday. Really good, hearty and filling. 8 servings at around 300 calories each.
¾ cup wheat berries, soaked overnight
2 large carrots, coarsely grated
1 medium red onion, coarsely chopped
1 large clove garlic, finely chopped
1 (28-ounce) can crushed tomatoes
1 (28-ounce) can tomato purée
2 teaspoons dried oregano
2 teaspoons ground cumin
½ teaspoon cayenne pepper
Kosher salt
2 (15-ounce) cans kidney, pinto or black beans, rinsed
1 (16-ounce) package frozen corn kernels
1 bell pepper (red or green), cut into ¼-in. pieces
1 tsp jalapeño hot sauce, plus more for serving
Sour cream, grated cheese and tortilla chips, for garnish
Rinse and drain the wheat berries and place them in a 5- to 6-qt slow cooker. Add the carrots, onion, garlic, tomatoes,
tomato purée, oregano, cumin, cayenne and ½ tsp salt; mix to combine. Cover and cook on low for 6 to 8 hours or on high for 4 to 5 hours.
Stir in the beans, corn, bell pepper and hot sauce and cook until heated through, about 5 minutes. Serve topped with the sour cream, cheese, tortilla chips and additional hot sauce, if desired.

What are wheat berries? Thought I had heard of all veggie alternatives, but this is new to me! Would Soya mince be an acceptable substitute or am I misunderstanding what they are?0

Just saw wheat berries for the first time this weekend next to quinoa in the grocery store. They look like a hearty grain but I haven't tried them yet but may do so in this recipe.
