Worn out porky need some help!

Hi all,

I had hit 300 pounds exactly about 2 years ago then tried dieting and levelled out around 262 pounds, then got a few medical problems and..... gave up!

I am now 53 and have to buckle down, accept that I need to get rid of at least another 60 pounds to help get some energy back and my cholesterol down. I will try and keep this bit short but underlying medical problems are:
Posterior cerebral artery is 100% blocked
Left Anterior Hemiblock
Had some mini-strokes in last 6 months
Mitral valve leaking (but not too bad)
Knees not too good, right knee had cartilages trimmed after accident

To top it all off after starting dieting and exercising I have just had a quite painful groin strain so the treadmill is unplugged again...

Dietary problems:
CANNOT eat Veggies but do love fruit (limited choices here, but apples, oranges, pears, pineapple, mango, water melon are easily bought.. Berries seem unavailable here.
I need a little more roughage than most people (like All Bran)
Total Cholesterol is 211, HDL is 38, LDL is 153 so LDL has to reduce especially seeing I have had heart problems (not heart attack though)

Where I am currently living, all I tend to eat is chicken breast fillet, jacket potato, processed peas, baked beans with reduced sugar and reduced salt, occasionally rice, fruit, cereals, porridge oats and a fair amount of water with a diet flavouring added (cambridge) Other foods available here like noodles, fish, fatty pork, veggies etc do not interest me so my food is a bit boring but I spice up the chicken for same variation. I am also trying to stop taking gravy but still use a small amount of tomato ketchup. Also I have given up bread (wheat type), please don't ask me to give up potato!! I need some carbs... I do not add salt to any food for last few years and do not smoke or drink alcohol (so I am a good boy sometimes lol)

Ok now, questions I need your help on.
Considering this groin strain - what exercises can I do to avoid delaying recovery? Still sore, only happened a week ago. I have only used treadmill and exercise cycle at my home before. At the moment a lot of walking or using stairs is painful so I spend a lot of time resting and I hate that.

Any recommendations on food? I need to keep fats a bit lower to reduce my LDL cholesterol, but I know I need to get back to the exercise as well to raise the HDL level. Please bear in mind the limited types of food available here and my hatred of vegetables and salads... Best I can do is stick a carrot in the juicer along with the fruits
