Amaranth recipes?

I've had some Amaranth grain in my cupboard for several weeks, but haven't gotten around to finding a recipe. I'm interested in adding it to my diet because it is higher in protein than most other grains, especially the amino acid lysine. It's also gluten free, for those of you who are sensitive.
Do I toast it first? Rinse it? Any experts out there? Can it be used in place of quinoa? Thanks!

I just found out Amaranth has twice as much calcium as cows milk and 3 times more fiber than wheat.0
