Brown Rice salad-- soo yummy
HI All,
I just wanted to share this because its so yummy and good for you!
Brown Rice salad- i make this a cold salad
basically you can put any veggies you like but this is what i put!
Brown Rice
zucchini
green peppers
red onion
fresh cilantro
carrots
fresh dill
arugula
salt & black pepper
white vingear
a dash of whatever salad dressing you have. I used an italian dressing...
sometimes i also add some roasted red peppers and pickled banana peppers..
hope you enjoy this as much as i do..

well i used trader joes organic brown rice from the freezer. I just heated up 2 packs in the microwave
so i think its about 4 cups of cooked rice
one cup of zucchini
one cup of green peppers
one big carrot chopped
half a red onion
2 cups of arugula
1/2 cup of cilantra
just a buch of dill cut up
i just put a splash of vinegar
and a tablespoon of italian dressing
i wish i could how to upload a photo but i dont know how.so you could have an idea.. its moslty veggies over the rice..0 -

If you can't get arugula, can you use something else?0

I have made something similar using orzo, will have to try the brown rice. Add broccoli florets and try it with balsamic vinegar and a little olive oil for dressing.0

I make something similar, but use couscous. I will often add garbanzo beans and/or low fat feta cheese along with my veggies of choice. Yummy!0
