This recipe is an attempt to replicate the famous Joe's Special from Original Joe's in San Francisco (http://originaljoessf.com). It's something we have eaten in my family for years. It's quick, nutritious and delicious! I'll eat it for any meal of the day.

This recipe will easily make 6 one cup servings. It keeps very well in the fridge for a few days.

You will need:

-A few tablespoons of olive oil
-One medium onion, diced
-two cups of sliced mushrooms
-3 garlic cloves, crushed or chopped fine
-1 pound of ground meat. I like to use ground turkey, but any meat will do
-1 pound of chopped spinach, fresh is best, but frozen work just as good
-three whole eggs
-salt and pepper to taste

-a dutch oven or other large sauce pan

Super easy directions:

1. Saute the onions, garlic and mushrooms in the olive oil over medium high heat till they are just browned.
2. Throw in the ground meat and brown.
3. Throw in the spinach and cook until the spinach is wilted, or if you are using frozen, until it is nice and hot.
4. Scramble the eggs and stir it into the mix. Stir while the eggs cook.
5. Salt and pepper to taste and serve.

In my house, we it over rice (usually brown), but it is fine on it's own. I have also put it in a hoagie, over pasta, and in a tortilla.
