Banana Walnut Bread (lower sodium)
I took a pan of this to work today and it was all gobbled up by the end of the day so it must be as good as I think it is!!
I got recipe from http://www.food.com/recipe/banana-nut-bread-reduced-sodium-449926 but made a few adjustments.
Ingredients:
1/2 cup vegetable oil (I used lite applesauce)
1 cup sugar (I used baking splenda)
2 eggs, beaten
3 bananas, mashed
2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon salt
3 tablespoons milk
1/2 teaspoon vanilla extract
1/2 cup nuts, chopped (I used a cup of walnuts, chopped)
1 tsp ground cinnamon (not in original recipe but man it sure does add a nice flavor!)
Directions:
1. Preheat oven to 350 degrees F. Lightly grease a 9 X 5 X 3 inch loaf pan
(I used a flat 9 x5? pan sprayed with Pam)
2. Beat oil(apple sauce) and sugar(splenda) together. (I just throw both into food processor and run it until its a consistent mixture)
3. Add eggs and mashed bananas and beat well. (throw in with above mixture and run food processor/blender again to 'mash' bananas until its all a smooth looking mixture (some small chunks of banana)
4. Add sifted dry ingredients, milk and vanilla. Mix well. (I'm too lazy to sift)
5. Stir in nuts.
6. Pour into prepared loaf pan.
7. Place in preheated oven and bake for about 60 minutes. (in my flatter pan it only took 30 minutes at 350 - poke fork or knife in center to make sure fully cooked)
8. Cool well. This is better if stored overnight before cutting.
9. Excellent with cream cheese for tea sandwiches. But again, read the label on the cream cheese if you are watching your sodium intake, it isn't as bad as you might think but you have to count everything.
My notes:
**** those snack cups of applesauce are great, they are exactly 1/2 cup so, very easy to just throw in!
**** very good with Philadelphia honey nut cream cheese.
My recipe came to:
calories: 197 Carbs: 28 Fat: 8 Protein: 5 Fiber: 2 Sodium: 128 Potassium: 195
If you only use 1/2 cup of walnuts it will adjust to:
calories: 163 Carbs: 27 Fat: 5 Protein: 5 Fiber: 2 Sodium: 127 Potassium: 173
