Homemade Almond Milk - Splitting/Seperating?

Thought this might be a good place to ask as I know a few people on here make their own almond milk...
I have started making my own almond milk using the 1 cup almond to 3 cups of water ratio (after soaking nuts for a while first). I blitz together and strain using muslin, but I have noticed that when putting almond milk into my hot drinks like coffee it is splitting, it looks gross! What am I doing wrong? :huh:

I read on a carton somewhere to put the milk in first ? so it isn't dropped into a big volume of hot coffee.
"Curdling" is a common problem with these types of milk - proteins coagulate as they are heated.0
