Why does my throat close when I eat sugar?

Sometimes when I take a bite of something particularly sugary (like a piece of hard candy) my throat closes up for a few seconds. It's extremely uncomfortable. It doesn't happen all of the time, but a lot of the time. What could this be? It also happens somethings with gum.
