Help I'm Hungry!

Hi, during the winter I have been lucky enough to ski several times each week and for the last 2 months I have skied for about 4 - 5 hours a day at least 5 days per week. Because of this I have been a bit lazy about logging food, as I have been burning plenty of cals skiing and shoveling snow and haven't been too bothered about loosing weight as I find I need the calories to be able to ski long and hard. Anyway, to cut a long story short the season is now over and I am currently walking and will start running gently in the next few days but I will not be burning anywhere near the calories I do in the winter.
The problem is I am trying to reduce my calorie intake and I am starving! I have got used to being able to consume larger portions and now although I am not burning the calories my appetite hasn't decreased.
Last summer I ran about 3km 3 times per week and found that I could only eat 1200 cals per day if I wanted to loose weight. If I ate back my exercise calories I did not loose weight at all.
I already have a low fat diet due to gallbladder disease and my metabolism is pretty slow due to having hypothyroidism for which I take levothyroxine.
Look forward to hearing from anyone that has any helpful ideas about foods that will fill me up until my appetite shrinks! ( I cannot eat large amounts of pasta / rice / salad leaves or anything cabbage familly also as a result of the gall bladder thingy as they are too difficult to digest.)

Is it possible to try and increase your summer activity level so that you can eat more?
