Just wondering if anyone knows exactly how much sodium rinsing canned food (veggies, tuna, etc.) takes off?? TIA!

I don't know exactly, I have just heard that it does reduce the sodium somewhat.

Someone told me it reduces the sodium by half. That of course seems too good to be true, but does anyone know an actual figure/percentage??

I have also heard that canned veggies lose some of their vitamins and minerals into the water that they are canned in as they sit on the shelf, and that actually cooking the veggies in that water can help them to retain a nutrition profile that is closer to the fresh version, as compared to cooking them in fresh water.

I love fresh veggies, but I think it is great to have canned on hand when you can't get to the grocery store or are in a huge hurry. My mother in law mixes a can of stewed tomatoes with a can of green beans, and it is actually VERY tasty.
